60Khandsari sugar is a traditional, minimally processed form of sugar made from sugarcane juice. It
sits between jaggery and refined white sugar in terms of processing. Unlike highly refined
sugar, khandsari retains some of the natural molasses content of sugarcane and undergoes
less chemical treatment.
It has historically been produced in rural sugar belts of India, especially in Uttar Pradesh,
Bihar, Maharashtra, and Punjab.
